  • Connemara Irish Oatmeal

    My daughter and I took a trip to Ireland where we explored the countryside and frightened quite a few natives with my driving. We were served this wonderful oatmeal which I have adapted to include a portion of soy. It’s better than any lucky charm!

    If you have thyroid disease, substitute 2% milk for the soy to avoid soy’s effect on thyroid enzymes. The addition of cinnamon boosts the glucose lowering effect of steel cut oats, which in turn, helps to lower your cholesterol count according to a recent study.

    CONNEMARA IRISH OATMEAL
      INGREDIENTS:

     
      DIRECTIONS:

    • Place milk, water, Irish oats, cinnamon, and salt in a saucepan and bring to a boil. Reduce the heat, cover and simmer for 20 minutes until soft but still liquid. Remove from the heat and let stand. Mixture will thicken as it stands.
    • Blend in raisins and almond extract. Sweeten with sugar substitute to taste.
