Magic Mushrooms See the Light

We’ve come a long way since the magic mushrooms of the 60’s, but researchers may have shone a light on how to make mushrooms a superfood source of Vitamin D. Just 5 minutes of UV light can turn 5 teeny tiny button mushrooms into a warehouse of Vitamin D, providing over 869% of our daily needs. Wow…I’d better show that box molding in my fridge some new respect..or at least put it outside!
Research by the Monterey Mushroom Company and the University of Pennsylvania proved that mushrooms “darken” just like people when exposed to UV light, turning them into Vit D sponges. Vit D is used by the body to keep bones and teeth strong, but it may reduce the risk of colon, breast and prostate cancer; stroke, hypertension, congestive heart and even diabetes.
It would take 4 ounces of fish, 4 cups of milk or 10 servings of fortified cereal to meet the RDA of 400 IU of Vit D. Just think about the calories involved in all that when you could get the same benefits for only 20 cal. YUM! Look for these super “rooms” this fall.
